Twist

Let me tell you about my newest twist
on vegetable.
It was a beautiful Saturday afternoon.
I was on my way to a friend’s house
which is very close to the market (Ije
Market at Dolphin Estate). I spotted
a variety of green leaves from every
corner and I concluded the market
women just got back from their farm
or wherever they get the vegetables
from.
While at my friend’s place, I kept
fantasising on the vegetables. I like
eating healthy, so I love vegetables
so much. There’s just something thera-
peutic about eating vegetable. The
health benefits of vegetables cannot
be overemphasised as they are impor-
tant sources of many nutrients and
overall a very healthy diet. (To enjoy
the benefits of vegetable it is advis-
able not too cook for too long and
not to store in the fridge of freezer for
long as well.)
So I got the following vegetables, on
my way back home. They looked
so fresh, yummy and could consume
them raw just by the way their fresh
very well
- Boil your meat, kpomo, organ meat
and any other thing that you want
to add, but boil the meat separately
- Blend your onion, bell pepper, yel-
low pepper(2), garlic and ginger
- Add 2/3 table spoon of palm oil in
the pot
- Slice some onions into it
- Pour the blended sauce into the hot
palm oil
- Add the stock from your boiled beef
- Add a pinch of salt and crayfish
Maggi(that is the big secret)
- Put the beef, organ meat, dried fish,
snail if available and others
- Allow to cook for a while
- Put the water leaf and leave it to
cook for like 3-5 minutes
- Add the Ugu and Sainted leaf and
allow to cook for 3-5 minutes
- Add the Uziza and allow to cook for
a little while
Guess what? The vegetable is ready.
I am still thinking of what to name it
though.
smell engulfed me as I picked each.
• Water leaf
• Ugu
• Sainted Leaf(Efirin)
• Uziza
Got other ingredients like
• Yellow pepper
• Stocked fish
• Dried Fish
• Cray Fish
• Beef
• Organ meat
• Kpomo
• Periwinkles
Had the following ingredients at home
• Bell pepper
• Garlic
• Ginger
• Onions
As a recipe creator, I did my magic
with the vegetables and it has been
my latest addiction. I eat it with every-
thing even noodles… lol
So let’s do this!!! I am sure you’ll get
addicted too.
